A Tomato Pie is what pizza was, before the chain restaurants adulterated it into mass produced, processed fast food. What makes our pizza unique? Whole milk grande mozzarella (no part skim here), romano cheese, a little grande provolone, followed by high quality toppings with our signature fresh herb tomato sauce swirled on top of the pie. Our crust is on the thin side, made from cold fermented dough with no sugar, stabilizers, or dough conditioners. Some of the pizza chains use over 14 ingredients and chemicals in their dough…we use just 5 – Unbleached, unbrominated premium flour, water, salt, yeast and Olive oil. Each of our pizzas look different and distinct. We use no automated presses, everything is shaped by hand. Your pizza is then baked off in an old fashioned 650 degree brick deck oven. No conveyer belt ovens are used here because they belong in factories, not restaurants. Because of the way we make pizza, some blistering and char is not only normal, it is encouraged! As a result of all this, it takes a bit longer. Good food takes time to create, it isn’t slapped together. Come on in, relax in our comfortable dining room, have a glass of wine or beer and enjoy!
