Tonight’s pizza is hearty and rustic. Let’s call it the Croque Farmer john. It’s just like the classic French croque Monsieur, if you sub smoked Gouda for the gruyere. Local Berkshire ham, béchamel, jenehr salted leeks, vitruvian farm arugula, fresh ground black pepper. It’s like eating in France…but in Sun Prairie.
Antipasto: house pulled burrata, watercress, local tomatoes (maybe the last for the season), underground meats farmhouse peperone, crostini.
And for dessert: house rosemary lemon shortbread served with an Aleppo, monbazillac perado, and vanilla gelato.
