Entree: Veal Saltimbocca- Wisconsin veal pounded thin and pan fried with prosciutto, sage and served over fresh linguini with spinach with a buttery lemon pan sauce. A Roman classic. 
Pie: our take on an Italian hoagie. hot soppressata, giardiniera (cauliflower, carrots, pickled jalapeño, yellow onion), pleasant ridge reserve , banana peppers, finished with arugula tossed in a garlic vinaigrette.
And for carry out and delivery : get a specialty pie or build your own 4 topping 16 inch pie with a large salad, chocolate chip cookies and a 2 liter soda for $29.

Weekend specials in Sun Prairie!  

Hey! We’ve got some specials for you this weekend and it starts tonight! 
Get a load of this burger: 6 oz’s of seared 40 day dry aged beef from Marigold Farm, Lovingly prepared with Pleasant Ridge Reserve cheese, beer onion jam, house pickles, and aioli. 

Dry aging is a process that concentrates the beef flavor, and imparts a special flavor. If you’ve never had a dry aged burger before this is something special. 
Pie: Patrick’s Favorite: Nduja Artisans fennel infused salami, panna (cream) braised fennel and onions, calabrese chili peppers, finished with fennel pollen and fronds.

Specials for Friday! 

Both restaurants have created a slightly different version of a nicoise-style pizza: 

Sun prairie: Tonight’s special pie is inspired by a classic Niçoise salad: olive oil poached Sea to Table tuna, with tomatoes, hard boiled egg, red potatoes, green beans, kalamata olives, capers, finished with a tarragon Dijon vinaigrette and arugula. 

  
And Madison: Thank goodness it’s Friday! To start your weekend off, come on down and try our featured pie. This weekend it’s inspired by a Nicoise salad: Oil poached Sea to Table Albacore Tuna, hard boiled eggs, marinated artichoke hearts, kalamata olives, green beans, cherry tomatoes, and is finished with a light and refreshing lemon creme fraiche with cracked black pepper.

Saturday Post Christmas tradition at Salvatore’s.  Both locations. 

For the past couple of years we’ve been featuring baccala on a pie the day after Christmas.  It was a holiday favorite of my grandfathers, and we like sharing it with you.  It’s a classic Italian American Christmas ingredient, usually enjoyed with family on Christmas Eve. Baccala is salted cod, dried and preserved.  I have many memories of my grandmother buying it in big slabs about a week before Christmas and soaking it in water for days.  We hope you enjoy it! 

The pie:  salt cod (baccala), roasted potatoes, calabrese chili peppers, tomatoes, roasted garlic, lemon creme fraiche, fresh thyme.

Sunday Packer’s game day special at Sal’s in Sun Prairie! 

We’re opening early today, at 2pm, for delivery and carry out so you can get this pretty snazzy deal before kickoff.  A large 1 topping pie and 12 Korean style wings with ssamjang sauce and house kimchi for just $25.  Like wings?
