Weekend Specials in Sun Prairie!  Starting Thursday 7/20


Edible art is what this pie is:  all the summer local goodness that’s available in Wisconsin wrapped up in one delicious pizza. Purple, gold and green cauliflower, house pickled calabrese chili peppers, smoked sungold tomato sauce, manchego cheese, shishito peppers, nduja artisans coppa, micro greens. 


Sweet corn season is here!  Butter poached and grilled Alsum sweet corn, calabrese chili herb butter, Roelli Red Rock Cheddar, onion ash salt.  


The Featured Burger:  half lb of local Conscious Carnivore beef, turkey egg from Stone Haus Farm, chimichurri aioli, sliced Spanish chorizo, caramelized onions, stalzys bun.

Weekend specials in Sun Prairie!  

Hey! We’ve got some specials for you this weekend and it starts tonight! 
Get a load of this burger: 6 oz’s of seared 40 day dry aged beef from Marigold Farm, Lovingly prepared with Pleasant Ridge Reserve cheese, beer onion jam, house pickles, and aioli. 

Dry aging is a process that concentrates the beef flavor, and imparts a special flavor. If you’ve never had a dry aged burger before this is something special. 
Pie: Patrick’s Favorite: Nduja Artisans fennel infused salami, panna (cream) braised fennel and onions, calabrese chili peppers, finished with fennel pollen and fronds.

A 12″ pie with squid ink-infused black dough, pork belly, Pleasant Ridge Reserve, wood ear mushrooms, roasted pepitas, Young Earth Farms pumpkin sauce and finished with micro greens.   There is pizza…and then there is Sal’s.

Craft beer week food and beer specials at Sal’s in Madison


Craft Beer Week continues at Sal’s in Madison tonight!
-We’ll be tapping the highly coveted Sump Coffee Stout by Perennial Artisan Ales! This will be paired with a pie: pulled pork, green pepper, figs, yellow onion, ricotta, and balsamic reduction.

– Weekened Featured Pie: “Gyro Pie” lamb, tomatoes, red onion, marinated feta, taziki, and chives

-Featured spring Small plate: wild rice with nettles and morels, asparagus, butter-poached red radish, fried burdock chips, Hook’s 2-Year Swiss cream sauce and rhubarb coulis

-Dessert: Rhubarb crumble cookies, strawberry coulis, preserved lemon mascarpone.

Weekend special spring pie with Morel Mushrooms. 

Every year when spring rolls around we look forward to making a series of pizzas with morel mushrooms.   This weekend we’re featuring the first of the series!  

Foraged morel mushrooms sautéed with butter and fresh thyme, spring asparagus, Landmark Creamery Anabasque mornay sauce, Cracked pepper, watercress, finished with shaved anabasque. (Madison pie is the same except instead of using anabasque cheese, it gets pleasant ridge reserve)

Chef Shinji Muramoto is bringing izakaya small plates to sun prairie tonight! 

  
Our good friend Chef Shinji Muramoto (43 North, Sushi Muramoto, Restaurant Muramoto) will be joining us in Sun Prairie this Saturday March 5th, and will be creating authentic Izakaya (Japanese Tavern) small plates at Sal’s for Madison Area Chefs Network MACN Chef Week. You don’t want to miss this experience! The menu will include Spicy Edamame, Beef Tongue and Trippa braised with miso, Seared Sea to Table Tuna Tataki, and Tskune, which is a traditional preparation that includes a skewered chicken patty served with poached egg.  
Patrick, John and Bill will be creating a dish with Pork belly, soba noodle and seaweed. We are making Japanese desserts that include purin, Coffee Jelly and Moche. all dishes will range from $4 to $8 so you can sample them all. Reservations are suggested, but not necessary. Come join us as we turn our corner of Sun Prairie into little Sapporo! (And yes, we’ll still be serving pizza!)

Specials for Friday! 

Both restaurants have created a slightly different version of a nicoise-style pizza: 

Sun prairie: Tonight’s special pie is inspired by a classic Niçoise salad: olive oil poached Sea to Table tuna, with tomatoes, hard boiled egg, red potatoes, green beans, kalamata olives, capers, finished with a tarragon Dijon vinaigrette and arugula. 

  
And Madison: Thank goodness it’s Friday! To start your weekend off, come on down and try our featured pie. This weekend it’s inspired by a Nicoise salad: Oil poached Sea to Table Albacore Tuna, hard boiled eggs, marinated artichoke hearts, kalamata olives, green beans, cherry tomatoes, and is finished with a light and refreshing lemon creme fraiche with cracked black pepper.
