Weekend specials in Sun Prairie! 12/1

Hey Sun Prairie, we have some specials for you this weekend!  

Entree: Veal Saltimbocca- Wisconsin veal pounded thin and pan fried with prosciutto, sage and served over fresh linguini with spinach with a buttery lemon pan sauce. A Roman classic. 
Pie: our take on an Italian hoagie. hot soppressata, giardiniera (cauliflower, carrots, pickled jalapeño, yellow onion), pleasant ridge reserve , banana peppers, finished with arugula tossed in a garlic vinaigrette.
And for carry out and delivery : get a specialty pie or build your own 4 topping 16 inch pie with a large salad, chocolate chip cookies and a 2 liter soda for $29. 
And finally, we’re open for lunch. 11-2pm. Come see us!

Weekend special spring pie with Morel Mushrooms. 

Every year when spring rolls around we look forward to making a series of pizzas with morel mushrooms.   This weekend we’re featuring the first of the series!  

Foraged morel mushrooms sautéed with butter and fresh thyme, spring asparagus, Landmark Creamery Anabasque mornay sauce, Cracked pepper, watercress, finished with shaved anabasque. (Madison pie is the same except instead of using anabasque cheese, it gets pleasant ridge reserve)

Chef Shinji Muramoto is bringing izakaya small plates to sun prairie tonight! 

  
Our good friend Chef Shinji Muramoto (43 North, Sushi Muramoto, Restaurant Muramoto) will be joining us in Sun Prairie this Saturday March 5th, and will be creating authentic Izakaya (Japanese Tavern) small plates at Sal’s for Madison Area Chefs Network MACN Chef Week. You don’t want to miss this experience! The menu will include Spicy Edamame, Beef Tongue and Trippa braised with miso, Seared Sea to Table Tuna Tataki, and Tskune, which is a traditional preparation that includes a skewered chicken patty served with poached egg.  
Patrick, John and Bill will be creating a dish with Pork belly, soba noodle and seaweed. We are making Japanese desserts that include purin, Coffee Jelly and Moche. all dishes will range from $4 to $8 so you can sample them all. Reservations are suggested, but not necessary. Come join us as we turn our corner of Sun Prairie into little Sapporo! (And yes, we’ll still be serving pizza!)

Tonight on Johnson St. 

 Tonight’s feature goes way back, back to 1935 in Trenton, NJ. Canio “tony” Sbarro opened a restaurant and called it The Casino. Tony decided Trenton needed an Italian HotDog, the perfect mashup of something all American mixed with classic Italian flavors. His hotdogs caught on, and Tony was a busy man. People would try and stop him on the street and say hi, and he’d always respond with “gotta go, gotta go”. So The Casino became Casino Tony Goes, and the Italian hot dog became The Casino Dog.  

Our version is an homage to the original: American wagyu beef hotdog, with roasted peppers, onions, mustard and local potatoes all on a Stalzy’s Deli baguette. hope you enjoy it as much as I did when I was a kid. 
We’re also featuring a pizza with chicken, crimini mushrooms, garlic, onions, pesto, red sauce, parsley and Sartori SarVecchio.

What a beautiful night for dinner on our patio. Join us for: 

Special Entree: house porchetta served with sautéed beet greens, chioggia beets, baby carrots, tomatoes, blue potatoes. 

Pie: roasted squash, spring onion, asparagus, romesco sauce, squash blossoms and Underground Meats fiocco. Finished with micro greens. 
Tacos: achiote marinated roasted lamb belly, papalo, tomato Arbol salsa, spring onions, micro pepper cress.

Sure it’s a rainy spring day, but our Saturday market offerings are pretty darn colorful! 

Salad: Landmark Creamery Petite Nuage (a French style sheeps milk cheese) with local strawberries, micro arugula and shingoku, chioggia and gold beets from Roots Down Farm, snap peas, strawberry gastrique and violas. 

Pie: Canopy Gardens Greenhouse sun gold tomato sauce with fennel and smoked paprika, Italian olive mix, summer squash, charred onions, garlic scapes and Underground Meats fiocco, finished with micro basil.

 Pizza tonight: shaved Italian truffles, wood ear, king trumpet, fresh porcini, oyster mushrooms sautéed in garlic butter and white wine, agretti, spring red onion, coppa.  
Sea bean and arugula salad with strawberries, squash blossom, violas, snap peas, pleasant ridge reserve, baby rainbow carrots and strawberry vinaigrette.

Entree: 8 oz angus flank steak, churrasco style, over roasted local sweet Carmen and poblano peppers, roasted Wisconsin gold potatoes, finished with cilantro lime compound butter.

Pie: smoked Gouda, laQuercia prosciutto, harmony valley farm mustard greens, sun dried tomatoes, house made burrata, jalapeno pesto.

Dessert: Chocolate and vanilla panna cotta, dried cherry compote and maple tuille.
